Today I am showing you some healthy vegan dinner ideas that are perfect for spring or summer. These recipes are super fresh and light, but packed with nutrients and delicious ingredients. Recipes below as always :)

RECIPES:

Avocado Corn Salsa:
1 cup corn
1 medium tomato, diced
1/2 avocado, diced
1/4 cup red onion, finely chopped
1 tbsp liquid sweetener such as maple syrup, agave
1 tbsp lime juice
hot sauce to taste

Tacos:
2 portobello mushrooms cooked with soy sauce and pepper
handful of kale, washed and chopped
tortillas or taco shells
avocado corn salsa (recipe above)

Lentil Sloppy Joes
2 cups cooked lentils
1/2 white onion, chopped
2 cups tomato sauce
1 tsp vinegar
1 tbsp lime juice
1/4 tsp pepper
1/2 tsp chilli powder
1 tsp smoked paprika
2 tbsp coconut sugar

Simple Coleslaw:
1 cup shredded lettuce and carrot
1 tbsp vegan mayo

Lemon Tahini Bowl:
rice
raw veggies
avocado
sesame seeds
green onion

Lemon Tahini Sauce:
2-3 tbsp tahini
1 tbsp lemon juice
1 tbsp sugar or maple syrup
1 tbsp soy sauce
water if needed to thin it out

  1. I like onion,but when you eat raw onion..well you know what happends to your breath,so do you eat like apples or idk how do you cure that onion breath?Omg this is such a lame question

    1. Chocolate Unicorn I could brush my teeth 10 times and still have onion breath if I eat raw red onion. The only think that gets rid of the smell and taste for me is drinking warm green tea.

    2. Chocolate Unicorn i heard that Water with ginger might help. but i dont eat raw onion so i dont know for sure if that Will help. Also, not a silly guestion at all ;)

    3. Try eating anything green like parsley since the clorophyll can neutralize the onion

  4. I use to be vegan but now I just avoid dairy. I have been trying all your reciepes, both with meat and without, and I absolutely love them. Even make my boyfriend and some of our friends try out everything I make and they enjoy them as well. I’ve even added quite a few of these reciepes to my own and make them once a month and some even once a week.
    Keep it up!
    (and that sauce up above, OMG that sauce!)

    1. Being vegan means living according to animal rights. So technically you can’t be an ex-vegan. If you see non-human animals as commodities, which is necessary to consume their body parts and secretions, you’ve never been vegan in the first place.
